Join the holiday spirit with family and friends in Fuego at Hotel Maya on Christmas Day, Wednesday, December 25, for a delicious Christmas Four-Course Prix Fixe Dinner from 5-9 p.m. Advance reservations required.
To help get into the festive spirit started, guests can enjoy a famous holiday cocktail including Fuego’s Naughty or Nice Margarita of Reposado tequila, Cointreau, lime juice, and agave nectar; the Christmas Cosmo, with Tito’s vodka, rosemary simple syrup, lime juice, cranberry juice and rosemary spring; Pumpkin Expresso Martini, with Tito’s vodka, Borghetti expresso, pumpkin simple syrup, agave, pumpkin spice, egg white and coffee beans; Persimmon Paloma, with Reposado tequila, persimmon puree, lime juice, agave, grapefruit bitters, grapefruit juice and dried persimmon; Maple and Clove Old Fashioned, with Uncle Nester Rye, clove maple simple syrup, Corbin cash sweet potato, bitters, agave, orange peel and clove; and Fig, Thyme and Honey Smash, with Tito’s vodka, fig, thyme and honey puree, agave, lemon juice, cranberry juice, two dried figs and thyme spring.
Executive Chef Luis Torre’s Four-Course, Prix Fixe Christmas Dinner menu offers a first course with Roasted Corn Chowder with lump crab, serrano and cotija. Christmas Dinner’s second course is a choice of Market Salad with orange, roasted beet, French radish, goat cheese, toasted almond and champagne vinaigrette; or King Oyster Mushroom Tamales with Oaxacan mole, poblano, smoked Mozzarella and black pepper honey crema.
Fuego’s Christmas Dinner entrees include a selection of Creekstone Farms Prime Filet Mignon with crispy cheddar polenta, Cipollini onions, wilted Bloomsdale spinach and pink peppercorn jus; Mary’s Farm Roasted Turkey with herb turkey gravy, roasted garlic potato puree, creamed Haricot Verts and mushrooms, apple brioche stuffing and Guajillo cranberry sauce; Pan Seared Local White Sea Bass with smoked tomato Saffron broth, braised fennel, gnocchi and baby squash; or English Pea Risotto with wild mushroom, pecorino, pea tendrils, almond and crème fraîche.
Fuego’s holiday dessert is a choice of Warm Almond Pear Tart with Praline, French vanilla ice cream; or Raspberry Chocolate Mousse with chocolate sponge cake and passion fruit.
